Chicken Yiros Traybake
A quick and easy traybake, this chicken dish with our 'Greece Lightning' seasoning is roasted to perfection with garlic, olives, potatoes, cherry tomatoes and lemons.
Ingredients
- 4 skinless chicken thighs
- Rub & Grub Greece Lightning seasoning
- 1 garlic bulb, broken into cloves
- 400g cherry tomatoes
- 350g baby white potatoes, halved if large
- 50g Kalamata olives, chopped
- 1 lemon, cut into wedges
- 2 tbsp olive oil
Method
- Pre-heat BBQ or oven to 190°C/375°F.
- Score lines all over the chicken thigh, then season moderately with Rub & Grub Greece Lightning and place in a roasting pan.
- Scatter the garlic, tomatoes, potatoes and olives over and around the chicken.
- Squeeze the lemon wedges over everything then place them in the roasting pan.
- Season with salt & pepper then drizzle over the oil and toss briefly to mix everything together.
- Cook in the BBQ/oven for 45 mins - 1 hour or until the chicken is cooked through and golden. Serve with rice or a green salad.
