A quick and easy traybake, this chicken dish with our 'Greece Lightning' seasoning is roasted to perfection with garlic, olives, potatoes, cherry tomatoes and lemons.

Chicken Yiros Traybake


  • 4 skinless chicken thighs
  • Rub & Grub Greece Lightning seasoning
  • 1 garlic bulb, broken into cloves
  • 400g cherry tomatoes
  • 350g baby white potatoes, halved if large
  • 50g Kalamata olives, chopped
  • 1 lemon, cut into wedges
  • 2 tbsp olive oil


  1. Pre-heat BBQ or oven to 190°C/375°F.
  2. Score lines all over the chicken thigh, then season moderately with Rub & Grub Greece Lightning and place in a roasting pan.
  3. Scatter the garlic, tomatoes, potatoes and olives over and around the chicken.
  4. Squeeze the lemon wedges over everything then place them in the roasting pan.
  5. Season with salt & pepper then drizzle over the oil and toss briefly to mix everything together.
  6. Cook in the BBQ/oven for 45 mins - 1 hour or until the chicken is cooked through and golden. Serve with rice or a green salad.
