Buffalo Chicken Cones

Ingredients

  • 6 boneless, skinless chicken thighs, cut into bite-sized pieces
  • 1 cup buttermilk
  • 6 tbsp hot sauce (adjust according to spiciness preference)
  • 1 tbsp salt
  • 1 pack Rub & Grub Nashville Fried Chicken Coating
  • Vegetable oil for deep frying
  • 6 waffle cones
  • 3 spring onions, thinly sliced
  • 6 celery sticks

Method

  1. In a bowl, mix buttermilk, 3 tbsp hot sauce (depending on your preference for spiciness), and salt. Add chicken pieces and mix well. Cover and refrigerate for at least 1 hour or overnight.
  2. Heat vegetable oil in a deep pan/fryer to 175°C (347°F).
  3. Remove chicken from the marinade and let excess buttermilk drip off. Coat each piece in Rub & Grub Nashville Fried Chicken Coating.
  4. Fry chicken for 4-6 minutes, or until golden brown and cooked through. Drain on paper towels.
  5. In a separate bowl, mix remaining 3 tbsp hot sauce and 3 tbsp hot oil from the fryer.
  6. Toss fried chicken in the hot sauce mixture until evenly coated.
  7. Fill each waffle cone with the buffalo chicken, and top with sliced spring onions and celery sticks.
  8. Serve and enjoy!
