Juicy chicken skewers with a sweet and tangy glaze made with Beenleigh Rum & Pineapple Crush. Perfect for grilling or pan-searing, and finished with a sprinkle of fresh coriander for an irresistible dish.

Rum & Pineapple Glazed Chicken Skewers

Ingredients

  • 6 chicken thighs, cubed into bite-size pieces
  • 1 can Beenleigh Rum & Pineapple Crush
  • 2 tbsp honey
  • 1 tbsp soy sauce
  • 1 tbsp lime juice
  • 2 garlic cloves, minced
  • Rub & Grub #MBDFB seasoning
  • Fresh coriander (garnish)

Instructions

  1. In a saucepan, simmer Beenleigh Rum & Pineapple Crush, honey, soy sauce, lime juice, and minced garlic over medium heat for 10-15 minutes until thickened.
  2. Thread cubed chicken thighs onto skewers and season generously with Rub & Grub #MBDFB seasoning.
  3. Grill over medium-high heat (200°C/400°F) or pan-sear on medium heat, turning occasionally, until the internal temperature reaches 75°C (165°F).
  4. During the last 3-4 minutes of cooking, brush on the prepared glaze for a glossy finish.
  5. Drizzle with remaining glaze and garnish with fresh coriander before serving.
