Tex-Mex Turkey Chilli

Ingredients

  • 500g turkey mince (beef is delicious too!)
  • 1 red capsicum, diced
  • 1 green capsicum, diced
  • 1 red onion, diced
  • 400g tin red kidney beans, drained and rinsed
  • 400g tin diced tomatoes
  • 4 tablespoons of Rub & Grub Pork Power seasoning
  • 1 cup chicken stock
  • 2 tbsp olive oil
  • Avocado slices, for garnish

Instructions

  1. Heat the olive oil in a skillet over medium heat. Add the turkey mince and cook until it's browned, breaking it up with a spoon as it cooks.
  2. Add the diced capsicums to the skillet. Cook them until they're tender and slightly caramelised, stirring occasionally.
  3. Stir in the drained kidney beans, diced tomatoes, Rub & Grub Pork Power seasoning, and chicken stock. Allow the mixture to come to a simmer.
  4. Reduce the heat to low and let the chili simmer for about 15-20 minutes, stirring occasionally. This will thicken the chili and allow the flavours to meld together.
  5. Serve the turkey chili piping hot! You can enjoy it with some steamed rice or a good crusty bread. Remember to top each serving with slices of creamy avocado.

Recipe Note

Feel free to adjust the seasonings according to your taste. You can also enhance the flavours by adding grated cheese, chopped coriander, or a dollop of sour cream.
